Chocolate vegetable muffins – Breakfast at Clique-any’s

If you ask my dad, he’d tell you that morning is not the time for chocolate. Isn’t it a sad existence to have such innane boundaries? Of course you may eat chocolate in the morning, and if you open your mind, really open it wide, you’ll enjoy it like no other time of day.

There’s something about chocolate being the first thing to hit your taste buds after a long night’s fast … rich, deep, slightly bitter, but pleasingly sweet (if you use the right kind of chocolate). It goes astoundingly well with coffee (if you drink it) and elevates muffins and pancakes to a new height of decadence. You know you want to treat yourself right, and chocolate in the morning is a great way to say, “Self… I love you.”

Now, self love goes beyond the indulgent; we have to feed ourselves nutrients too, to tell ourselves how much we value health and energy and vitality. Nothing says vitality like a veggie muffin, so why not love yourself all over and try this recipe for chocolate vegetable muffins.

You want to make them healthier? Use sprouted flour, carob powder instead of cocoa, sucanat, grain-sweetened chocolate chips, and unsweetened yogurt.

The only thing I can think of to make them more decadent is to add some raspberries, because nothing says classy like chocolate and raspberries.

I agree, nothing like a little chocolate to put yourself in a good mood first thing in the morning. It’s the true breakfast of champions. ;-)
Those muffins sound great, but I’m not a huge fan of oat bran. Does the chocolate mask that awful bran-aftertaste?

I don’t know — I leave out things like oat bran, wheat germ and all those types of healthy additives b/c I use the sprouted flour. Sometimes I’ll use ground flax seed instead of those ingredients.
