I love breakfast. In all the phases I have been through in my increasingly long life, skipping breakfast has never been one of them. From shoving cinnamon toast down my piehole and running unsuccessfully for the bus in middle and early high school, to drinking a smoothie on the way to work in the big city (I don’t miss that commute!), I’ve never missed a breakfast. Better late than hungry is my guiding principle.
With that attitude established, let me say that pancakes have slowly become one of my favorite breakfast foods. They are full of happy weekend moments for my family and they just taste good! Time to sing the praises of all good things about pancakes….
1. The smell of pancakes cooking is one of the only reasons to get out of bed on the weekends.
2. Did I mention that they are almost always banana chocolate chip pancakes?
3. They are easily made with sprouted (or regular) spelt flour for a wheat-free option.
4. Gluten-free pancakes kind of suck, but at least the option is still out there. Everyone should be able to enjoy some kind of pancake.
5. Buckwheat. Buckwheat pancakes are dense, nutty and delicious, particularly with strawberries or raspberries. And these are a tasty gluten-free option.
6. You can add lots of chunks to customize them; you never have to have the same pancake twice (except banana chocolate chip, because, well, they’re banana chocolate chip).
7. They soak up the gooey egg yolk from your eggs over easy perfectly.
8. Pancakes make everyone happy… from the four-year-old to the husband.
9. Fresh blueberries are coming into season soon. The added pop in your pancake is undeniably amazing.
10. They fill you up and give you energy to start your day with a bang, not a whimper.
11. The slightly crisp outsides and the mushy, fluffy insides are a study in contrasting textures. Add in the melty chocolate chips of my favorite kind and they are practically a gourmet masterpiece.
This article alone is the reason I’m running out the door right now and going to a diner for a nice short stack of banana pancakes.
I’m totally going for pancakes tomorrow now!!!
It’s so funny, because pancakes are the one thing I cannot make. I don’t know what it is. Whether I make them from scratch, or from the mix where you just add water, I have never been able to make a decent pancake in my entire life. It is my great shame. Luckily, we go to brunch across the street nearly every Sunday, and they always have delightful pancake options. Mmmmm… oatmeal pancakes.
What goes wrong with them? I have a really easy pancake recipe that I’ll post soon. You should give it another shot, because homemade pancakes are the best. Or, just make Luke learn how to make them.
Kona, it could also be something as simple as your pan or your spatula. I can only flip our pancakes with one of our gazillion spatulas and have them come out pretty. And a non-stick griddle is the best choice of pan.
I would say it’s the equipment, but Luke can make perfectly delightful pancakes using what we have. I don’t know why, but they always come out heavy and pasty, and just kind of gross. I just have bad pancake mojo.
Pancakes are one of my favorite weekend breakfasts. I will have to try the banana chocolate chip ones now. I normally go with either blueberry or huckleberry.
