Another year older, another year wiser … or something like that. I did get a little spoiled on my birthday this week — Owen and Keith made me an omelet (or, as they appear in our house, scrambled eggs with stuff in them) and bacon … on a weekday! Believe me, that’s something special around these parts.
I love eggs any way you prepare them (except deviled, because of that pesky mayonnaise), but I especially love an omelet or frittata overflowing with “chunks,” and that’s just what I got for my birthday. Yet, it was delightfully simple as well.
Perfect Birthday Omelet for Two and a half

Don’t even think about using our technique to make the perfect omelet. Go with your gut on this one. I can tell you, though, that even if it looks sort of funny, it will taste the same as a pretty, folded omelet. Just scramble it all together; no one will hold it against you.
Or maybe we just need a good omelet pan?
