March is National Celery Month (which makes sense, since St. Patrick’s Day is in March and celery is a shade of green), and even though I love celery, doesn’t that sound like the most boring food holiday month ever? I mean, it’s celery.
I have to admit that celery isn’t one of those ingredients I have in mind when I search online for recipes. I just can’t imagine going to Google or AllRecipes or Food Network’s site, thinking “I’m in the mood for something celery-ish tonight, I wonder what I can make.” But I did just that today just to see what I could find, besides spreading peanut butter on celery, one of my favorite snacks as a kid.
Here’s an Apple and Celery Salad from LoveToKnow.com, and here’s one for Scrambled Eggs with Celery and Onions from the same site. Rachael Ray has a recipe for Super Tuscan Burgers and Potato Salad with Capers and Celery. And if you think you can’t put celery in a dessert, try the Celery Cake!
I will put all kinds of vegetables in my baked goods, zucchini, carrots, corn, peppers, pumpkin…I think I draw the line at celery. Just the fact that the recipe also has mayonnaise in it makes me shiver…blech.
