You already know that we love banana chocolate chip pancakes, strawberry oatmeal muffins and eggs. What you don’t know is that Keith is a breakfast meat junkie. Me? I prefer an egg over-easy with my starchy breakfast goodness, or on a rare day, a slice or two of uncured, all-natural turkey bacon.
In the interest of family harmony, however, we do occasionally partake in the high-calorie breakfast meats my husband so adores, and I admit to there being two that I particularly enjoy. They are both all-natural chicken sausages, so the calories aren’t that bad and they are much healthier than most breakfast meats out there.
If you’re in the mood for a sweeter, very breakfast-y sausage, then you’d probably love the Apple Maple Sausage that we get from Trader Joe’s. They are big, fat sausages, so all you really need is half a sausage (or one and a half if you’re Keith) to satisfy you and to accompany your tasty frittata. They are juicy with big chunks of apple, and a delightful sweet maple flavor is present from the Vermont maple syrup used in the recipe. These are the favorite of the four-year-old.
Sometimes for me, though, the apple maple sausages are a little too sweet and I like a more savory sausage to balance out my breakfast. That’s where the Chicken Mango Sausages come in, also from Trader Joe’s (I know you’re probably wondering what we’d eat if we didn’t have a Trader Joe’s nearby; believe me, this comes up as a major topic of conversation often!). Yes, there are sweet chunks of mango in them, but overall, the sausage is not sweet at all, just chicken-y and delicious with that little hit of sweet when you do get a chunk.
Cooking them is easy; all we do is broil them in the toaster oven since they come precooked. They aren’t bad pan-fried, either, but the toaster oven requires less babysitting.
