I never have blueberry pancakes. It’s not that I don’t like them, I do. It’s just that when I get up in the morning I’m usually rushing around so I just grab a cup of tea. I know, I know, breakfast is the most important meal of the day, yada, yada, yada. But taking the time to make blueberry pancakes just seems out of the question most days. It would be nice if someone would volunteer to come to my house and make me blueberry pancakes or Eggs Benedict every morning. E-mail me if you’d like to do that.
Today is National Blueberry Pancake Day. I think there are two types of blueberry pancake makers/lovers. One just puts the blueberries inside the pancakes, the other also puts blueberries on top of the pancakes when they’re done.. I’m in the former category.

As for variations on the classic recipe (I like my blueberry pancakes with just blueberries in them), here’s a recipe for Blueberry Cinnamon Pancakes from CD Kitchen, and here’s one from Chef De Cuisine that includes bananas. Actually, that sounds pretty good.
For a gluten-free recipe, here’s one from Gluten-Free Cooking that uses white rice flour, tapioca flour, and potato starch, along with a gluten-free pancake mix.
