Recipe Test Drives: Dad’s Meatloaf with Tomato Relish

 

Tyler FlorenceI’m a huge fan of Tyler Florence and his Food Network show, Tyler’s Ultimate. One of my favorite recipes from the show is his meatloaf. I think that first time that I had it was at my sister’s house. That’s right; this meatloaf is so good, it’s worthy of serving to guests. I kid you not. The only big secret here is the tomato relish that you make. Half of it goes into the loaf itself while the other half goes on top as the glaze. It may be a little more work than your average meatloaf, but it is definitely worth it.

The relish doesn’t really add that much work, so don’t let it scare you away. Aside from that, the rest of the recipe is easy as pie. Actually, it’s a whole lot easier than pie. Now that I think about it, I’m not sure where that saying actually comes from. Pie can be intimidating. You have to make the crust, and then the filling. You have make sure the crust doesn’t burn, but that it gets done enough on the bottom. Pie is not easy! This meatloaf, however, is.

The one piece of advice that I would give, which goes against just about everything I believe about cooking is this: leave off the bacon. The recipe calls for some slices of bacon across the loaf and my experience is that the meatloaf is so good (and very moist due to the relish) that the bacon is unnecessary. The few times that I have made this, the bacon didn’t crisp up as nicely as I would have hoped and just sort of got lost in the meatloaf.
